Menu Plan Monday


What a great weekend we had, out to dinner with friends on Saturday then caught a movie with some chocolate and candy, made a quick day trip yesterday to see some family and ate at a buffet for lunch.  Now it's Monday I'm ready to get back on the health bandwagon and eat some good for my body food this week!  Over the last month  I have gained back some pounds I lost and now I'm ready to say good bye to them!  I have no excuses, I've ate a bunch lately and a lot of junk so unfortunately I deserved it!

Here's to a healthy week!

Monday-  Crock Pot BBQ Pork Ribs (for the hubby, I'm making spaghetti squash for me)  Baked red potatoes and Green Beans

Tuesday- Stuffed Pepper Soup from the freezer.  Have I mentioned how much I love having food in the freezer before?  Because it truly is one of the things that makes me happy!  I need to start adding instead of taking away because there is only a few things left.
Also I don't like stuffed peppers so much but this soup I really do like!


Wednesday-  Whole Chicken in the Crock Pot, Brown rice and carrots

Thursday-  Leftovers

Friday-  Clean Baked Ziti and salad

Menu Plan Monday


Welcome to Menu Plan Monday


Sunday- Family Outing to Panda Express, fancy right? 

Monday-  Salisbury Steak/ mashed potatoes and gravy/green beans
Not my personal favorite but the hubs has asked for it a few times lately, so it finally made it onto the menu this week!


Tuesday-  Homemade Pizza

Wednesday- Chicken and Rice soup

Thursday- Leftovers

Friday- Quesadilla Casserole   I have had a certain mexican casserole that I have been making for awhile.  I found this recipe about a month ago, tried it and we decided we liked it better so it's our new go-to Mexican casserole.  If you are a clean eater this is a great mexican choice!  

Saturday- Wait and See!

Menu Plan Monday

Our weekly menu plan.

I made our plan on Saturday and last night watched Hungry for Change, next weeks will probably look a lot different.  I have a love/hate relationship with documentaries like that.  Makes me feel guilty about alot of things we have in this house.  Over the last half a year I have really been trying to change the way we eat but we still have a long way to go, especially with the boys!

Sometime this week I will be trying this for me but not expecting Matthew to eat it since he doesn't like the texture of pasta.  I've heard this is delicious and I finally found some Spaghetti Squash yesterday so I'm anxious to try it!  You can find the recipe here  for Spaghetti Squash with Grilled chicken and Sun-Dried Tomatoes.


Monday-  Beef Stew over rice (weird I know, but that's how Matthew likes it!)

Tuesday- Breakfast for dinner

Wednesday- Chicken and Broccoli with rice

Thursday- Nuxoll Burgers on my grill pan and these potatoes


Friday- Chicken Fajitas

Menu Plan Monday

Our Menu for the week!

Sunday-  Chicken Pot Pie
Monday-  Steak, Mashed Cauliflower, Grilled Veggies
I just got a new grill pan for the stove and can't wait to use it!


Tuesday-  Slow Cooker Ham, Potatoes, Green Beans 


Wednesday- Chicken  and Wild Rice Casserole (carry over from last week)  I have had two sick kids, pretty much one attached at all times.  I'm lucky I made anything last week!

Thursday- Leftovers

Friday- Tacos ( my homemade taco seasoning is Here if you haven't tried to make your own yet, so easy and so much better for you.   I just make a bunch at a time so I always have it)

Menu Plan Monday!

I'm back at it!  I used to post menus all the time and fell off the bandwagon, so since I still menu plan each week I will try to share.  It takes me forever usually to find/ decide on what to make so I love reading other posts and searching Pinterest for ideas.  It takes even longer now that I'm trying to make healthier meals and cut out all the processed junk I can!  

Monday- Baked Pork Chops, Smash Potatoes, and Green Beans

Homemade Granola Bars

I have made the time this week to  try some of my pinterest pins.  I finally tried one of the homemade granola recipes I have been looking at for months so I thought I would share.  There are so many out there but here is the one I actually made.

I took pictures and was going to post them along with this, but lets face it I stink at picture taking and this bloggers are way better so you get to enjoy her pictures instead!

Mine weren't setting up as fast as they should have ( I think I put in a little too much honey) so I put mine in the fridge.  They are a little sticky but taste really good!   I will try them again with a little less honey next time to make them more like store bought ones!

The thing about these is they aren't "clean" since there is brown sugar in them, and crisp rice cereal but hey it's a starting point and still much better for you than store bought!

Homemade Taco Seasoning

My husband loves tacos.  Each week when I ask if there is anything he wants me to make he always says well I always like tacos. Of course I don't mind either, they are EASY.  And since I have been trying to make healthier meals tacos are a good one.  We can use whole wheat tortillas, some veggies and to top it off homemade taco seasoning.  Taco seasoning isn't expensive but at $.50 to $1.00 a pack making your own can save a little bit, it's easy and the most important it's so much better for you so why not!  We've all seen a million different pins of homemade taco seasoning but I made this one a little while back to try it, loved it so made some more today.

I took the recipe and x'd it by 10 so  I would have some for awhile.  I bought generic spices when I could and still have plenty of spices left over to make more again when I use it all again.  

Here is the recipe that would season 1lb of meat.



1 Tbsp chili powder
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp crushed red pepper flakes
1/4 tsp dried oregano
1/2 tsp paprika
1 tsp ground cumin
1 tsp kosher salt
1 tsp black pepper



All you have to do is mix it up and it's ready for the beef!
